Timothy Is the Author of the Cookbook and Blog, Mississippi Vegan

Timothy Pakron is a photographer, cookbook author, food blogger, and gardener from the Gulf Coast of Mississippi. He's also the creator of Mississippi Vegan, both a cookbook and blog with one main goal: celebrating the abundance of plants and mushrooms in the most delicious way possible.

Timothy’s passions also involve foraging and building his very own garden in New Orleans, LA. His goal is to create fun, healthy, and sometimes oh-so-decadent recipes showing the world that vegan food can be exciting and equally as delicious as traditional food. 

Because he’s been eating only plants and mushrooms for the last 13 years, he feels as though he has a deep connection with them, and that is precisely why he’s dedicated his life to celebrating their beauty through stories, recipes, and photographs.
