His journey is all about celebrating the abundance of plant and mushrooms in the most delicious way possible: eating them!
Timothy’s passions also involve foraging and building his very own garden, which he is currently working on here in New Orleans, LA. His goal is to create fun, healthy, and sometimes oh-so-decadent recipes showing the world that vegan food can be fun and equally as delicious as traditional food.
Because he’s been eating only plants and mushrooms for the last 13 years, he feels as though he has a deep connection with them, and that is precisely why he’s dedicated his life to celebrating their beauty through stories, recipes, and photographs.
